8/19/14:  Racked out both the Cherry Cider and an experimental Blueberry batch into the trertiary fermentation today. I was quite pleased with the Cherry sampling, as it really retained the Cherry notes and even without resting was quite drinkinkable. The Blueberry, on the other hand, failed to absorb the flavor. I had only used fresh blueberries though, so I will try it again with dried blueberries and blueberry juice next time.

Also, took a trip to the NJ ABC and got information on opening a cidery, since hard cider is treated as wine based upon it's fermented nature, I'll need to follow those guidelines. Still, this is a dream i will make a reality.
